Flatbreads

  • 150 g plain flour
  • 80 g wholemeal plain flour
  • 150 g water
  • 15 g extra virgin olive oil
  • 180 g red onion
  • 5 garlic cloves
  • 200 g lamb mince, lean (see Tips)
  • 3 tsp ground cumin
  • ½ tsp dried chilli flakes
  • 200 g beetroot, peeled and thinly sliced
  • 250 g cherry tomatoes, cut into halves

Tahini yoghurt

  • 140 g natural yoghurt, high protein (see Tips)
  • 35 g tahini
  • 2 garlic cloves
  • 20 g lemon juice
  • 1 tsp ground cumin
  • 2 sprigs fresh mint, leaves only
  • 2 sprigs fresh coriander, leaves only
  • ground black pepper, to season
