  • 150 g red bell pepper, seeded and quartered
  • 150 g green bell pepper, seeded and quartered
  • 20 g olive oil
  • 500 g bulk breakfast sausage (casings removed if using links)
  • 10 eggs
  • 30 g whole milk
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 200 g sharp cheddar, grated
  • 8 large flour tortillas (about 25 cm)
  • Salsa, to serve
