Ingredients

Slow cooked beef

  • 60 g soy sauce
  • 1 tsp sesame oil
  • 1 tsp raw sugar
  • ½ tsp ground cinnamon
  • 4 star anise
  • 800 g beef rump cap (see Tips)

Wasabi mash

  • 800 g red potatoes, peeled and cut into pieces (approx. 2 cm)
  • 200 g full cream milk
  • 30 g butter
  • 2 tsp wasabi paste, to taste
  • 1 pinch sea salt, to taste

Steamed greens

  • 500 g water
  • 1 bunch bok choy (see Tips)
  • 1 spring onion/shallot, cut into thin slices, to serve (optional)
