Quinoa

  • 3 garlic cloves
  • 50 g ghee
    or 50 g unsalted butter
  • 1000 g water
  • 2 tsp fine sea salt
  • 150 g white quinoa

Salad

  • 1 spring onion, white part only (approx. 15 g)
    or 1 shallot
  • 3 sprigs fresh coriander, leaves and stalks, finely chopped, plus extra for garnishing
  • 30 g lemon juice
  • 2 Tbsp extra virgin olive oil
  • ¼ tsp fine sea salt, to taste
  • ¼ tsp ground black pepper, to taste
  • 300 g broccoli, cut into large florets
  • 40 g dried cranberries
  • 50 g flaked almonds, toasted
