Ingredients

Balti paste

  • 2 fresh long red chillies, trimmed and cut into halves
  • 40 g fresh ginger, peeled
  • 20 g garlic cloves
  • 320 g fresh coriander (approx. 5 bunches), leaves, stalks and roots, cut into thirds (see Tips)
  • 160 g brown onion, cut into halves
  • 60 g olive oil (see Tips)
  • ½ tsp ground turmeric
  • 20 g ground coriander
  • 1 tsp ground cumin
  • 120 g fresh tomatoes, cut into quarters
  • 1 ½ tsp salt
  • ½ tsp raw sugar
  • 2 tsp garam masala (see Tips)
  • 120 g water
