Ingredients

  • 1 garlic clove
  • 1500 g water
  • 10 g dried shiitake mushrooms, cut into slices
  • 1 tbsp Chicken stock paste (see Tips)
  • 1 dried bay leaf
  • 4 black peppercorns
  • 1 skinless chicken breast fillet, cut into thin slices (approx. 5 mm)
  • 250 g fresh tortellini
  • 1 carrot, cut into thin slices
  • 2 celery stalks, cut into thin slices
  • 2 - 3 spring onions/shallots, trimmed and finely sliced on the diagonal, for garnishing
