Ingredients

  • 1 garlic clove
  • 100 g brown onion, cut into quarters
  • 250 - 300 g baby beetroot, peeled, reserving 7 leaves and stalks, cut into pieces (3 cm)
  • 60 g carrot, cut into pieces (3 cm)
  • 50 g celery stalk, cut into pieces (3 cm)
  • 150 g potato, peeled and cut into pieces (3-4 cm)
  • 60 g cabbage, cut into pieces (3 cm)
  • 60 g parsnip, peeled and cut into pieces (3 cm)
  • 750 g water
  • 1 tbsp Chicken stock paste (see Tips)
  • ¼ tsp ground black pepper
  • 3 allspice berries
  • 1 fresh bay leaf
  • 400 g canned cannellini beans, rinsed and drained (approx. 250 g after draining)
  • 60 g tomato paste
  • 60 g lemon juice
  • 80 g sour cream
  • 2 spring onions/shallots, cut into thin slices
