  • 1 tsp pickled capers, drained
  • 1 pickled cucumber (approx. 60 g)
  • 1 tsp lemon juice
  • 2 tsp olive oil
  • ½ tsp soy sauce
  • ¼ tsp salt, to taste
  • ½ tsp ground black pepper
  • 250 g beef tenderlion (high quality), fat trimmed, partially frozen and cut into pieces (2 cm)
  • 4 egg yolks, room temperature
  • bread, to serve
  • mixed salad greens, to serve
