Ingredients

Peking-style duck

  • 2 duck breasts, skin on, trimmed of excess fat and sinew
  • 3 - 4 spring onions/shallots, trimmed and cut into thirds
  • 8 sprigs fresh coriander, stalks only
  • ¼ tsp Chinese five spice
  • ¼ tsp black peppercorns
  • 1 star anise
  • 1 tbsp soy sauce
  • 1 tbsp sesame oil

Plum sauce

  • 2 fresh plums, cut into quarters
  • 60 g honey
  • 2 star anise
  • ¼ tsp Chinese five spice
  • ½ tsp ground cinnamon
  • ¼ tsp ground ginger
  • 1 tbsp soy sauce
  • 50 g water

Pancakes

  • 3 eggs
  • 200 g warm water
  • 90 g tapioca starch
  • 1 tsp sesame oil
  • 2 tbsp coconut flour
  • coconut oil, for frying
  • 6 - 8 spring onions/shallots, trimmed and cut into slices
  • 1 - 2 Lebanese cucumber, cut into batons
