Ingredients

Spiced cauliflower

  • 1 ½ tsp cumin seeds
  • 1 ½ tsp coriander seeds
  • 1 tsp fennel seeds
  • 1 ½ tsp paprika
  • ½ tsp ground cumin
  • ½ - 1 tsp chilli powder, to taste
  • ½ tsp salt
  • ground black pepper, to taste
  • 1500 g cauliflower, broken into bite-sized florets
  • 2 - 3 tbsp extra virgin olive oil, to taste
  • 60 g shelled pistachios, roughly chopped (see Tips)
  • 1 tbsp lemon juice
  • 3 sprigs fresh mint, leaves only, shredded
  • 1 pomegranate, arils only (see Tips)

Minted yoghurt

  • 1 garlic clove
  • 2 sprigs fresh mint, leaves only
  • 200 g natural yoghurt
  • 1 tbsp lemon juice
  • 1 tsp honey
