  • 400 g good quality pork sausagemeat, broken in pieces
  • 75 g roasted red peppers, preserved, drained, sliced (1 cm)
  • 30 g breadcrumbs (see tip)
  • 1 Tbsp tomato purée
  • 2 medium eggs, 1 mixed with 1 Tbsp water
  • ½ tsp smoked paprika
  • ½ tsp dried chilli flakes (optional)
  • ½ tsp fine sea salt
  • ¼ tsp ground black pepper
  • plain flour, for dusting
  • 300 g puff pastry (see tip)
