  • 200 g cream, min. 30% fat
  • 1030 g water
  • 1 tsp lemon juice
  • 30 g butter, unsalted, cold and as much as possible in one piece (approx. 60 mm x 40 mm x 10 mm)
  • 1 tsp salt
  • 50 g vinegar

  • ½ vanilla pod
  • 600 g whole milk
  • 200 g cream, min. 30% fat
  • 30 g sugar
  • 6 egg yolks
