  • 1 ½ c. sopa de açúcar
  • 1 ½ c. chá de sal
  • 6 cravinhos
  • 430 g vinho tinto

Recheio

  • 250 g cebola cortada em pedaços
  • 300 g fiambre cortado em pedaços
  • 100 g bacon cortado em pedaços
  • 40 g mostarda
  • 150 g cornichons
  • 1 c. chá de pimenta

Molho

  • 60 g cebola cortada em pedaços
  • 100 g cogumelos Paris cortados em pedaços
  • 20 g manteiga
  • 180 g legumes (cenoura, aipo, alho-francês), cortados em pedaços (1 cm)
  • 30 g mostarda
  • 30 g concentrado de tomate
  • 50 g água
  • 250 g vinho tinto
  • 2 - 2 ½ cubos de caldo de carne

Bifes enrolados

  • 60 g azeite
  • 2 c. sopa de paprika
  • 10 bifes de novilho (1200 g aprox.), largos e finos (25x12 cm aprox.)
  • Sal q.b.
  • Pimenta q.b.
  • 30 g farinha
  • 100 g natas azedas
