Ingredients

Corn Cake

  • 3 oz unsalted butter, in pieces, plus extra to grease
  • 5 oz all-purpose flour, plus extra to dust
  • 14 oz sweetened condensed milk (approx. 1 can)
  • 1 tsp vanilla extract, natural
  • 4 large eggs
  • fresh sweet corn kernels, from 6 fresh corn cobs (see Tip)
  • 1 tbsp baking powder

Eggnog Sauce

  • 17 ½ oz whole milk
  • 3 ½ oz sugar
  • 1 pinch baking soda
  • ½ cinnamon stick (approx. 2 in.)
  • 1 whole clove
  • 6 egg yolks, from large eggs
  • ½ tsp vanilla extract, natural
  • 2 ½ oz rum
    or 2 ½ oz brandy
