  • 130 g red apple, core removed and cut into quarters
  • 2 tbsp raw sugar
  • ½ tsp ground nutmeg
  • ½ tsp ground cinnamon, plus extra to sprinkle
  • ½ tsp ground allspice
  • 2 eggs
  • 20 g cornflour
  • 1 tsp baking powder
  • 1 pinch sea salt
  • 1200 g water

Syrup

  • 70 g pouring (whipping) cream
  • 50 g raw sugar
  • ¼ tsp natural vanilla extract
  • 1 tbsp water
  • 40 g butter, cut into cubes
  • 2 star anise
