Ingredients

Sponge

  • butter, to grease
  • 6 eggs, separated, at room temperature
  • 115 g caster sugar
  • 70 g plain flour
  • 50 g vegetable oil

Vanilla diplomat mousse

  • 10 g titanium strength gelatine leaves
  • cold water, to soak
  • 330 g milk
  • 1 tsp vanilla bean paste
  • 60 g caster sugar
  • 25 g cornflour
  • 4 egg yolks (approx. 65 g)
  • 300 g thickened cream

Assembly

  • 10 - 12 fresh strawberries, whole, evenly sized, plus extra to decorate (see Tips)
  • 160 g fresh strawberries, hulled and sliced to layer
  • icing sugar, to dust
  • edible flowers, to decorate
