  • 2000 g water
  • 3 tsp Chicken stock paste (see Tip)
  • 1 tsp Chinese black vinegar
  • 2 cm piece fresh ginger, cut into slices (3 mm)
  • 50 g miso paste
  • 2 eggs
  • 100 g fresh baby spinach leaves
  • 270 g dried ramen noodles
  • 1 nori sheet, torn into 4 pieces
  • 4 tbsp canned sweet corn kernels
  • 2 spring onions/shallots, cut into thin slices, to garnish
  • 2 tsp sesame seeds, toasted, to garnish
