  • 3 - 4 ripe bananas, cut into pieces (approx. 350 g)
  • 1 egg
  • 2 tsp natural vanilla extract
  • 100 g brown sugar, plus extra 1 tbsp (optional), to sprinkle
  • 250 g plain flour
  • 2 tsp cocoa powder (see Tips)
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 2 pinches sea salt
