Ingredients

  • 250 g celery, cut into pieces
  • ½ white onion
  • 3 spring onions/shallots, trimmed and cut into pieces
  • 3 garlic cloves
  • 1 - 2 fresh red chillies, trimmed, to taste
  • 2 ½ cm piece fresh ginger, peeled
  • 500 g fresh tomatoes, cut into halves
  • 100 g eggplant, cut into pieces (3 cm)
  • 1 apple, cored and cut into halves
  • 100 g fresh pineapple, cut into pieces (3 cm)
  • 80 g sun dried tomatoes
  • 25 g fresh coriander, leaves, roots and stalks cut into pieces
  • 8 sprigs fresh thyme, leaves only
  • 3 sprigs fresh basil, leaves only
  • 5 sprigs fresh parsley, leaves only
  • 200 g white vinegar
  • 125 g brown sugar
  • 125 g tomato paste
  • 1 sweet corn cob, kernels removed from cob
  • 200 g canned tomatoes, diced
  • sea salt, to season
  • ground black pepper, to season
