Ingredients

Breadsticks

  • 100 g Gruyère cheese, cut in pieces (2 cm)
  • 10 g fresh parsley, cut in pieces
  • 600 g water
  • 1 tsp dried instant yeast
    or 10 g fresh yeast, crumbled
  • 200 g spelt flour, plus extra for dusting
  • 10 g olive oil
  • 1 egg yolk, from a medium egg
  • 1 heaped Tbsp cumin seeds
  • ½ tsp salt

Mixed Greens Pesto

  • 150 g olive oil
  • 80 g Parmesan cheese, cut in pieces (2 cm)
  • 2 garlic cloves
  • 50 g carrot tops, organic, roughly chopped (3-4 cm)
    or 50 g turnip greens, organic, roughly chopped (3-4 cm)
  • 25 g fresh tarragon, leaves only
  • 80 g almonds
  • 1 - 2 pinches fine sea salt, to taste
  • 1 pinch ground black pepper, or to taste
