Ingredients

  • 2 lemons, preferably organic, zest and 25 g juice

Pineapple Jam

  • 15 - 25 g fresh ginger, peeled, thinly sliced, to taste
  • 750 g fresh pineapple, cut into pieces
  • 250 g berry sugar
    or 250 g jam sugar 2:1

Crumble

  • 30 g unsalted butter, chilled
  • 180 g almond flour
  • 1 tbsp poppy seeds
  • 20 g pecan nuts, caramelized (see Tip)
  • 15 g maple syrup (optional)

Filling

  • 300 g cream cheese, chilled, in pieces
  • 50 g whipping cream, 30%-35% M.F., chilled
  • 1 ½ tsp vanilla sugar (see Tip)
  • 1 pinch salt
  • 2 large eggs
  • 400 g water
