Ingredients

  • 28 oz stew meat, trimmed and cubed (1 in.)
  • 2 tsp dried oregano
  • 1 tsp ground smoked paprika
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground cayenne pepper
  • 1 ¼ - 1 ¾ tsp sea salt, to taste, divided
  • 1 - 2 pinches ground black pepper
  • ½ - 1 oz cilantro roots and stalks (leaves reserved to garnish) (see Tip)
  • 1 oz olive oil
  • 7 oz red onion, cut into wedges (approx. 1 in.)
  • 1 fresh jalapeño chili halved, deseeded (optional)
  • 2 garlic cloves
  • 6 oz red bell peppers, deseeded and cut into pieces (1 in.)
    or 6 oz yellow bell peppers, deseeded and cut into pieces (1 in.)
  • 2 tsp cocoa powder
  • 1 tbsp red wine vinegar
  • 28 oz canned crushed tomatoes
    or 28 oz canned diced tomatoes
  • 1 tsp freeze dried instant coffee granules
  • 1 tbsp cornstarch
  • 1 tbsp water
  • 14 oz canned kidney beans, rinsed and drained
  • 14 oz canned black beans, rinsed and drained, (optional)
  • sour cream, to serve
  • grated cheddar cheese, to serve (see Tips)
