Ingredients

  • 100 g cheddar cheese
  • 2 garlic cloves
  • 20 g extra virgin olive oil
  • 1 large onion, cut into quarters
  • 2 carrots (approx. 250 g), cut into pieces
  • 2 celery stalks (approx. 100 g), cut into pieces
  • 1 zucchini (approx. 200 g), cut into pieces
  • 200 g fresh brown mushrooms, cut into halves
  • 500 g beef mince, broken into pieces
  • 600 g floury potatoes, red and blue varieties, cut into pieces (1 cm)
  • 600 g sweet potato, cut in pieces (2-3 cm)
  • 50 g tomato paste
  • 40 g plain flour
  • 80 g water
  • 1 tbsp Vegetable stock paste (see Tips)
  • 3 tbsp Worcestershire sauce
  • 1 tbsp Dijon mustard
  • ¾ tsp ground black pepper
  • 1 dried bay leaf
  • 1 tsp dried mixed herbs
  • 150 g frozen peas
  • 30 g salted butter
  • 100 g full cream milk
  • ½ tsp sea salt
