Ingredients

  • 50 g Parmesan cheese, cut into pieces (3 cm) (optional)
  • 2 slices day old bread, torn into pieces
  • 200 g fresh spinach leaves
  • 2 pieces lemon peel, no white pith (1 x 5 cm)
  • 120 g brown onion, cut into halves
  • 140 g bacon, trimmed and cut into pieces
  • 20 g extra virgin olive oil
  • 2 tbsp pine nuts, toasted
  • 180 g Danish feta or goat's milk feta, cut into pieces (1 cm)
  • ⅛ tsp ground nutmeg
  • ¼ tsp sea salt
  • ¼ tsp ground black pepper
  • 6 - 8 fresh portobello mushrooms, brushed clean and stalks removed
