  • 220 g canned bamboo shoots, cut into slices
  • 3 makrut lime leaves
  • ¼ tsp sea salt
  • 600 g skinless chicken thigh fillets, cut into thirds
  • 30 g palm sugar or light brown sugar
  • 2 tbsp fish sauce
  • 100 g frozen green peas
  • 100 - 200 g broccoli, cut into florets
  • 20 fresh Thai basil, leaves only, to garnish
  • fresh long red chilli, cut into thin slices, to garnish
