Ingredients

  • ½ - 1 oz garlic cloves (approx. 7-9 cloves), to taste
  • 1 ½ oz extra virgin olive oil, divided
  • 17 ½ oz ripe tomatoes, i.e. dry-farmed tomatoes (see Tip)
  • 1 anchovies, preserved in olive oil
  • ½ heaping tsp chili powder
  • ¼ tsp fine sea salt, to taste
  • 21 ½ oz water
  • 8 oz pasta
  • grated pecorino cheese, to taste
  • 7 ½ fresh basil leaves, torn into small pieces
