Ingredients

Berry Dream

  • 5 oz sugar
  • 18 oz mixed frozen red berries
    or 18 oz frozen fruit any type
  • ½ - 1 oz lime juice to taste (optional)
    or ½ - 1 oz lemon juice to taste (optional)
  • 2 egg whites pasteurized (see Tip)
    or 2 oz liquid egg whites, pasteurized (see Tip)
  • 3 ½ oz fresh mixed red berries to garnish

Lemonade

  • 2 - 3 lemons preferably organic, unpeeled, halved
  • 36 oz water chilled, divided
  • 4 oz sugar to taste
  • 10 ice cubes

Broccoli Salad

  • 10 ½ oz broccoli florets
  • 1 red bell pepper (approx. 5.5 oz), cut into pieces
  • 1 dessert apple (e.g. Granny Smith or Pink Lady), (approx. 5.5 oz), quartered
  • 1 oz pine nuts
    or 1 oz sunflower seeds
  • 1 oz olive oil
  • ½ oz fruit vinegar
    or ½ oz white balsamic vinegar
  • 1 tsp honey
  • 1 ½ tsp mustard
  • 1 tsp salt
    or 1 tsp herb salt
  • ½ tsp ground black pepper

Pizza Dough

  • 1 oz extra virgin olive oil plus extra to grease
  • 8 oz water room temperature
  • 1 tsp sugar
  • 2 tsp active dry yeast
    or 2 tsp dried instant yeast
  • 14 oz bread flour
  • 1 tsp salt
  • 35 oz water

Parmesan Risotto (TM6)

  • 1 ½ oz Parmesan cheese cubed (½ in.)
  • 3 oz onion quartered
  • 2 garlic cloves
  • 1 oz extra virgin olive oil
  • 1 ½ oz unsalted butter cold, cubed (½ in.), divided
  • 10 oz risotto rice (e.g. Carnaroli, Arborio) with 14-15 minutes cooking time (see Tip)
  • 2 oz dry white wine
  • 25 oz water
  • 1 stock cube beef or vegetable
    or 1 heaping tsp stock paste beef or vegetable
  • ½ - 1 tsp salt to taste
