  • 1 tsp salt
  • 1600 g water
  • 2 star anise
  • 1 cinnamon stick
  • 20 g fresh ginger cut in slices
  • 300 g beef fillets thinly sliced (approx. 1-2 mm)
  • 10 g coriander leaves chopped
  • 10 g spring onions chopped
  • 1 pinch ground black pepper
  • 1 lime cut in quarters
  • 100 g fresh mung bean sprouts
  • 1 - 2 tsp chilli paste (sambal kicap) (see tips) (optional)
