Ingredients

Cake

  • 200 g unsalted butter, cut into pieces and softened, plus extra for greasing (see Tips)
  • 680 g plain flour
  • 540 g white sugar
  • 2 tbsp baking powder
  • 2 pinch salt
  • 500 g full cream milk
  • 2 tsp natural vanilla extract
  • 4 eggs, room temperature

Buttercream icing

  • 250 g icing sugar (see Tips)
  • 120 g unsalted butter, cut into pieces and softened
  • 2 tsp boiling water
  • ½ tsp natural vanilla extract

Fondant

  • 80 g water
  • 6 tsp gelatine powder
  • 200 g glucose syrup
  • 30 g glycerine (see Tips)
  • 1240 g icing sugar, plus extra sifted for dusting (see Tips)

Colouring fondant

  • food colouring of choice (approx. 5 colors)

Modelling paste

  • ¾ tsp tylose (see Tips), plus extra if needed
  • vegetable shortening (Copha®)
  • sugar glue (see Tips)

Assembly

  • sugar glue (see Tips)
