  • ½ tsp salt
  • ½ tsp lemon juice
  • 3 oz heavy whipping cream
  • 35 oz water

Dough

  • 2 ½ oz sugar
  • 2 oranges, thin peel only, no white pith
  • 10 oz whole milk
  • 2 ¼ tsp active dry yeast
    or 1 packet/envelope active dry yeast
  • 1 ½ oz unsalted butter, diced, plus extra to grease
  • 1 large egg
  • 1 egg yolk, from large egg
  • 1 tsp salt
  • 1 tbsp vanilla extract
  • 22 oz all-purpose flour
  • 35 oz water

Filling

  • 8 oz pecan halves, toasted
  • 3 oz unsalted butter, diced
  • 2 tbsp ground cinnamon
  • 1 ½ oz dark brown sugar

Assembly

  • 1 large egg, whisked
