Ingredients

Pizza Dough

  • 30 g extra virgin olive oil, plus extra to grease
  • 220 g water, room temperature
  • 1 tsp sugar
  • 1 packet dried yeast (2¼ tsp)
  • 400 g bread flour
  • 1 tsp salt

Topping and Baking

  • 100 g zucchini, ends removed
  • 120 g red onion, halved vertically (1 small onion)
  • 80 g white button mushrooms, fresh, whole, stem removed (5-6 mushrooms)
  • 100 g yellow pepper, cut into 2 wedges, stem, seeds and membranes removed
  • 100 g red bell pepper, cut into 2 wedges, stem, seeds and membranes removed
  • 200 g chopped tomatoes, canned, drained
  • 200 g grated mozzarella (see Tip)
  • 2 - 3 pinches salt, to taste
  • 2 - 3 pinches ground black pepper, to taste
