  • 200 g caster sugar
  • 100 g water

Walnuts

  • 50 g walnut halves
  • 10 g caster sugar
  • 10 g unsalted butter

Herb Crackers

  • 150 g plain flour
  • 80 g water
  • 20 g olive oil, plus extra for brushing
  • 1 tsp dried rosemary
  • 1 tsp fine sea salt
  • 2 - 3 pinches coarse sea salt, for sprinkling

Serving

  • 250 g Camembert, whole
    or Brie cheese, whole
