  • 1 tsp vanilla extract

  • 2 oz rum
  • 1 oz unsweetened shredded coconut

Pineapple Filling

  • 20 oz canned crushed pineapple, drained
  • 2 oz sugar
  • 1 tbsp cornstarch

Frosting

  • 16 oz heavy whipping cream, chilled
  • 2 ½ oz confectioners sugar
  • 1 tsp vanilla extract
  • 1 tsp coconut extract

Assembly

  • fresh pineapple slices, to decorate
  • coconut flakes, to decorate
  • pineapple crown, to decorate (optional)
