  • 200 g all-purpose flour, plus extra to dust
  • 170 g carrots (approx. 3 medium), peeled, cut into pieces, plus extra, thinly sliced, to garnish
  • 200 g sugar
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • 225 g canned crushed pineapple, in juice, undrained
    or 225 g canned pineapple pieces, in juice, undrained

Cream Cheese Frosting

  • 85 g cream cheese, chilled, cut into 4 pieces
  • 30 g unsalted butter, room temperature
  • 2 - 3 tsp lemon juice
    or 2 - 3 tsp pineapple juice
  • 200 g icing sugar
  • ¼ tsp ground nutmeg
