  • 8 oz smoked cheddar cheese, cut into pieces
  • 5 oz freshly squeezed orange juice
  • 3 oz maple syrup
  • 1 tbsp Dijon mustard
  • 1 tsp salt
  • 1 oz red wine vinegar
  • 12 oz olive oil
  • 16 oz fresh baby spinach
  • 12 oz clementines, peeled and in segments
    or 12 oz mandarins, peeled and in segments
  • 6 oz pomegranate arils/seeds
  • 4 oz walnut pieces, dry roasted (see Tip)
