Ingredients

Zucchini noodles

  • 340 g carrots peeled, slender type, approx. 5 cm in diameter
  • 340 g zucchinis slender type, approx. 5 cm in diameter

Spicy chicken

  • 30 g sugar
  • 1 tbsp corn starch
  • 1 tsp Chinese five spice powder
  • 30 g rice vinegar
  • 30 g mirin (optional)
  • 30 g tahini
  • 85 g light soy sauce
  • 1 - 2 tsp dried chilli flakes adjust to taste
  • 600 g chicken thigh, boneless and skinless organic, cut in pieces (10 cm)
  • 1 tbsp sesame oil, untoasted
  • 30 g fresh ginger peeled, cut in pieces
  • 1 jalapeño pepper stem removed, cut in pieces
  • 2 garlic cloves
  • 1000 g water
  • 1 tbsp cooking oil for frying
  • 2 sprigs fresh coriander leaves chopped, to garnish
  • 1 sprig spring onions thinly sliced, to garnish
