Ingredients

  • 1 eschalot
  • 2 garlic cloves
  • 2 cm fresh ginger peeled
  • 20 g palm sugar
  • 30 g salted peanuts
  • 1 fresh red chilli trimmed and cut in halves, plus extra thinly sliced to serve
  • 20 g peanut oil
  • 30 g peanut butter
  • 50 g Chinese black vinegar
  • 10 g fish sauce
  • 40 g soy sauce
  • 20 g oyster sauce
  • 1500 g hot water
  • 500 g pork mince crumbled into separate grains
  • 400 g fresh ramen noodles seperated
  • 120 g fresh green beans trimmed and cut into pieces (3-4 cm - see Tips)
  • 1 bunch fresh coriander leaves only, roughly chopped, 1/2 set aside to garnish
  • 1 lime cut into wedges, to serve
