Ingredients

Pork Belly

  • 2 tsp Chinese five spice
  • 4 Tbsp soy sauce, dark
  • 2 Tbsp runny honey
  • 3 garlic cloves
  • 10 g butter
  • 40 g onion, halved
  • 1000 g pork belly, boneless, skinless
  • 200 g water, cold

Bao Buns

  • 250 g strong white bread flour, plus extra for dusting
  • 2 tsp fresh yeast
  • ¼ tsp baking powder
  • ¼ tsp bicarbonate of soda
  • 1 pinch caster sugar
  • 1 pinch fine sea salt
  • 1 Tbsp milk
  • 1625 g water, tepid
  • groundnut oil, for greasing

Wasabi Mayonnaise

  • 500 g groundnut oil
    or 500 g sunflower oil
  • 4 - 5 tsp wasabi paste, to taste
  • 1 Tbsp white wine vinegar
  • 1 Tbsp lime juice
  • 1 pinch caster sugar
  • 1 pinch fine sea salt
  • 1 pinch ground black pepper
  • 2 egg yolks, from large eggs

To Serve

  • 1 little gem lettuce, washed and separated
