Ingredients

Orange Cakes

  • 225 g unsalted butter, softened, cut in pieces, plus extra for greasing
  • 200 g caster sugar
  • 1 tsp natural vanilla extract
  • 1 Tbsp orange peel, grated
  • 4 eggs (53-63 g each)
  • 225 g self-raising flour
  • 1 pinch fine sea salt

Meringue Kisses

  • 100 g caster sugar
  • 2 egg whites

Mango Sauce

  • 30 g caster sugar
  • 100 g ripe mango, cut in pieces
  • 30 g orange juice, freshly squeezed

Cream Cheese Filling and Topping

  • 200 g caster sugar
  • 100 g cream cheese
  • 100 g unsalted butter, softened, cut in pieces
  • 1 Tbsp orange peel, grated
  • 1 kiwi fruit, cut in slices, to serve
  • 1 plum, cut in slices, to serve
