Ingredients

Marinade

  • 2 tsp ground coriander
  • 2 tsp Kashmiri chilli powder
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • 40 g cornflour (see Tips)
  • 1 tsp ground black pepper
  • 1 tsp salt
  • 2 tsp ginger paste (see Tips)
  • 1 tsp garlic paste (see Tips)
  • 2 eggs
  • 2 limes, juice only (approx. 40 g)
  • 700 g skinless chicken thigh fillets, cut into pieces (3 cm) (see Tips)

Green chutney

  • 20 g pistachios
  • 20 g fresh mint leaves (approx. ½ bunch) (see Tips)
  • 60 g fresh coriander, stalks and leaves only
  • 4 fresh long green chillies, trimmed, cut into halves and deseeded, if preferred
  • 1 lemon, juice only (approx. 40 g)
  • 1 tsp ginger paste (see Tips)
  • 2 - 3 tsp water
  • ½ tsp salt

Assembly

  • 800 g vegetable oil, for frying
  • 20 fresh curry leaves
