Rice

  • 1300 g water
  • 1 ½ tsp salt
  • 25 g olive oil
    or unsalted butter, diced
  • 300 g basmati rice

Garam Masala Spice Mix

  • 2 tsp black peppercorns
  • 2 Tbsp coriander seeds
  • 1 Tbsp cumin seeds
    or 1 Tbsp caraway seeds
  • ½ tsp ground nutmeg
  • 1 tsp cloves
  • 1 Tbsp ground cardamom
  • ½ tsp ground cinnamon
  • 1 dried bay leaf

Chicken Garam Masala

  • 400 g tinned chopped tomatoes
  • 80 g sour cream, 10 % fat
  • 50 g unsalted butter, diced
  • 1 tsp sugar (optional)
  • ¾ - 1 ½ tsp fine sea salt, to taste
  • 500 g chicken breast fillets, skinless, diced (3 cm)
