  • 1 heaped tsp beef stock paste, homemade (see tip)
    or 1 beef stock cube (for 0.5 l) (see tip)
  • 250 g water
  • 30 g extra virgin olive oil
  • 2 ¼ tsp fine sea salt, plus extra to taste
  • 250 g courgettes, cut in pieces (3 cm)
  • 100 g brown onions, quartered
  • 250 g beef mince, broken in pieces
  • 3 tsp ras el hanout (see tip)
  • 10 g vegetable oil
  • 20 g white wine vinegar, plus extra to taste
  • ½ cucumber, peeled into ribbons, for garnishing (optional)
  • ground black pepper, to taste
  • 4 Tbsp Greek yoghurt (optional)
