Ingredients

  • 1000 g daikon, 4-5 cm diameter, to fit through feeder tube (see Tip)
  • 1 tsp stock paste
  • 1 tsp sea salt
  • 1500 g water
  • 20 g piece fresh ginger, sliced
  • 2 star anise
  • 3 g cinnamon quill
  • 300 g beef fillet steak, thinly sliced (approx. 1-2 mm)
  • 10 g fish sauce
  • 10 g fresh coriander leaves, thinly chopped (1-2 mm)
  • 10 g spring onion/shallot, thinly chopped (1-2 mm)
  • ½ tsp fresh ground black pepper
  • 1 lime, cut into wedges, to serve
  • 100 g fresh bean sprouts
  • fresh chilli, thinly sliced (1-2 mm)
  • 4 tsp hoi sin sauce (optional)
  • 2 tsp hot chilli sauce (optional)
