  • cold water
  • 60 g caster sugar

  • 2 vanilla beans
  • 500 g full cream milk
  • 70 g unsalted butter
  • 1 pinch salt

Puff pastry

  • 250 g plain flour plus extra for dusting

  • 2 tsp lemon juice

  • 160 g water
  • 80 g unsalted butter chilled and cut into pieces (2 cm)
  • 1 pinch salt
  • 2 tsp white sugar
  • 120 g plain flour
  • 1 egg lightly beaten
  • 3 eggs

Chantilly cream

  • 2 tbsp icing sugar
  • 450 g pouring (whipping) cream (see Tips)
  • 1 tsp natural vanilla extract
