  • 4 garlic cloves
  • 200 g red onions, cut into quarters
  • 10 g olive oil, plus extra for greasing and brushing
  • 20 sprigs fresh parsley, leaves only
  • 20 sprigs fresh coriander, roughly chopped
  • 130 g canned chickpeas, drained
    or 130 g cooked chickpeas, drained
  • 250 g cooked black-eyed beans, drained
    or 250 g canned black beans, drained
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 pinch freshly ground black pepper
  • 1 tbsp tahini paste (30 g)
  • 2 tbsp lemon juice
    or 2 tbsp lime juice
