Ingredients

Syrup

  • 300 g sugar
  • 150 g water
  • 1 tsp lemon juice, freshly squeezed
    or 1 tsp citric acid
  • 2 tsp blossom water

Kashta cream

  • 1000 g milk
  • 150 g white bread, crust removed, cut into pieces
  • 100 g cornflour (starch)
  • 1 tbsp blossom water
  • 2 tbsp rose water

Dough

  • 200 g medium wheat semolina
  • 50 g fine semolina
  • 500 g akkawi cheese, desalted, cut into pieces (see tip)
  • 200 g mozzarella, rinsed and dried, cut into pieces

Assembly

  • sunflower oil, for greasing
  • unsalted pistachio nuts, chopped, to garnish
