  • 400 g brown onion cut into eighths
  • 100 g extra virgin olive oil plus an extra one tablespoon
  • 1 tomato cut into halves
  • 460 g ricotta
  • 1 tbsp smoked paprika
  • 6 sprigs fresh coriander leaves only
  • 6 sprigs fresh flat-leaf parsley leaves only
  • 1 - 2 pinches ground black pepper
