  • 45 g freshly squeezed lemon juice
  • 1 tsp ground cinnamon
  • 1 tsp oil, (e.g. sunflower oil or coconut oil)

Poppy Seed Crescents

  • 20 g fresh yeast, crumbled
  • 25 g caster sugar
  • 50 g unsalted butter, cut in pieces
  • 410 g plain flour, plus extra for dusting
  • ½ tsp fine sea salt
  • 1 medium egg
  • 4 egg yolks, from medium eggs

Spread

  • 10 fresh chives, cut in pieces
  • 250 g cottage cheese
  • 1 egg yolk, from medium egg, beaten
  • poppy seeds, for garnishing

Chai Tea

  • 500 g water
  • 300 g milk
  • 10 g black tea leaves
  • ¼ tsp ground cardamom
  • ½ tsp ground cinnamon
  • 20 - 50 g caster sugar (optional)

Blinis

  • 15 g unsalted butter
  • 100 g milk
  • 100 g sour cream
  • 1 medium egg
  • 1 tsp fine sea salt
  • 150 g plain flour
  • 15 g caster sugar
  • ½ tsp baking powder
  • ½ tsp baking soda

Assembly

  • 50 g cornichons, sliced, for garnishing
  • 20 g caviar, for garnishing
  • fresh chives, finely diced, for garnishing
