  • 16 oz cod fillets, skinless and boneless, cut into 4 even sized pieces then individually wrapped in parchment paper
  • ½ oz olive oil
  • 2 garlic cloves
  • 5 ½ oz whole milk
  • 1 oz all-purpose flour
  • ½ oz salted butter
  • 1 pinch ground black pepper
  • ½ oz freshly squeezed lemon juice
  • ½ oz fresh parsley, leaves only (approx. 15 sprigs)
  • 2 large eggs
  • 1 tsp mustard
