Ingredients

Bread

  • 15 g granulated sugar
  • 350 g strong white bread flour
  • 140 g water
  • ½ tsp dried instant yeast
    or 5 g fresh yeast, crumbled
  • 1 ½ tsp fine sea salt
  • 1 tsp oil, for greasing

Burger

  • 1200 g water, plus 3 Tbsp
  • 1 ½ tsp fine sea salt, plus 1 pinch
  • 100 g quinoa
  • 1 Tbsp linseeds
  • 30 g extra virgin olive oil, plus 1 Tbsp and extra for greasing
  • 30 g shallots
  • 1 garlic clove
  • 1 pinch ground black pepper
  • 200 g tinned black beans, rinsed and drained (1 x 400 g tin)
  • 10 g breadcrumbs
  • 35 g halved walnuts
  • 20 g tomato purée
  • 2 tsp ground cumin
  • 2 tsp sweet smoked paprika
  • 2 - 3 tsp poppy seeds
    or black sesame seeds
  • 4 slices preserved red pepper (optional)

Assembly

  • 4 Tbsp ketchup
  • 4 - 6 curly endive
  • 8 - 12 slices tomatoes
  • 1 avocado, flesh only, sliced, or to taste (optional)
  • 1 red onion, sliced in rings, or to taste (optional)
